Lobster roll

With this weekend being the 4th July, every TV programme, shop and supermarket is celebrating everything American or red, white, blue!

With the sun out and staying near the coast, this weekend lobster rolls are a must on the table!

I find the best rolls have very little fuss…why hide the taste of the lobster!! Which makes this recipe even simpler!


Poaching liquor

1 onion, halved

2 Tbsp salt

4 crushed garlic cloves

1 tsp pepper
4 lobsters, (about 500g each) killed but not cooked

120g butter

1 garlic clove

6 hot dog buns

2 tbsp mayo


Place all the poaching ingredients in a wide large pot add enough water to fill the pan with 2 inches of water

Bring to boil, then add the lobsters ( heads up) and then the lid

Boil for about 6 minutes, or until the lobsters are cooked

Once ready remove the lobsters then add to a baking sheet to cool

Once cool, crack the lobster open and remove all the meat from the body and claws. Roughly dice up the meat into large chunks and place in a bowl with all the juices


Meanwhile melt the butter with the garlic and brush inside the hot dog rolls

Grill the buns to golden

Gently reheat the lobster meat in the leftover melted butter. Make sure you don’t over cook it!!

Mix the mayo with the meat, just a light costing is needed, then season

Fill the buns with the lobster meat and serveimage
