The idea of baking something gluten free often involves a lot of added ingredients such as xantham gum, gluten free flour etc. So when I come across a recipe which has most of the ingredients to be found in your kitchen cupboard or the local supermarket I can’t wait to try it out.
This recipe was atcually called chocolate orange cake, but with very little chocolate used I decided to up the orange flavour by adding orange zest and syrup and make it a gluten free orange cake.
The added syrup makes this cake exta moist and bursting with flavour. But be careful not to over soak the sponge or it might turn into mush!
Ingredients
250g butter
250g caster sugar
1 orange zest
4 eggs
125g rice flour
125g ground almonds
1 tsp baking powder
Glaze
75 ml orange juice
40g sugar
50g dark chocolate, melted
Method
Cream the butter, sugar and orange zest together until pale and fluffy. This should take about 5 minutes Crack in the eggs, one at a time and whisk until all incorporated Fold in the rest of the dry cake ingredients and then pour the mix into a prepared cake tin before baking for 30-35 minutes
Meanwhile make the syrup by adding the orange juice and sugar into a pan and bringing it to a simmer to dissove the sugar, then set aside
Remove the cake and stab holes all over the cake with a skewer
Carefully pour the syrup into the cake and leave to cool
Finally drizzle over the melted chocolate
This looks amazing! Really inventive too, I haven’t tried baking an orange cake before!
