The other day my little sister tagged me in an Instagram picture of cookie dough which has been sandwiched together by two brownies chocolate brownies which was then followed by a message saying ‘can we make this?’.
Trying to pretend that it wasn’t good for her to eat anything like this, I honestly couldn’t wait to try out a recipe!
Realistically the best bit of baking is licking out the bowl after making the dough. But with most of the recipe involving raw egg my mum use to tell me off from eating too much of it!
Based on this, I found a recipe which created a raw cookie dough mix involving no eggs, so no baking making it really easy to do. I didn’t follow on to sandwich it between 2 brownies…but there is nothing stopping you!
100g caster sugar
100g light brown sugar
2 tbsp double cream
1 tbsp vanilla extract
1/2 tsp salt
85g chocolate chips
Using an electric whisk or by hand the butter and both caster and light brown sugars together until light and fluffy
Gradually add the cream and vanilla extract and continue to mix well
Once fully incorporated add the flour and salt and gently mix together until it has just come together…don’t over do it!
Finally stir in the chocolate chips and add to a serving bowl to chill in the fridge until ready to enjoy
