Authentic pad Thai

Another delicious recipe that I must share is a real Thai favourite- pad Thai. For anyone that doesn’t like spice this is the one dish you are sure to enjoy.

Ingredients for 1 person
Rice noodles, soaked until soft about 80g
Grated carrot about 1/4
Bean sprouts, handful
Tofu, diced about 50g, chicken, prawn can also be used
Shallot, about 1/2
1 Egg
2 tbsp crushed and roasted peanuts
80ml tamarind water
1 tsp palm sugar
1 tbsp chives, chopped
Pinch chilli powder (optional)
Oil
2 tsp light soy sauce
1 tsp oyster sauce
1/2tsp black soy sauce

Method
In a bowl mix together both soy sauce, oyster sauce, sugar, tamarind water, 1tbsp peanuts and set aside

In a wok add a dash of oil along with the shallots, pinch salt and tofu and cook until golden

Push everything to one side of the wok the crack in the egg and mix to scramble it, then mix with the rest of the ingredients

Once cooked, which wouldn’t take too long, add the noodles and mix. Try to get everything tossed together

Add the sauce, made earlier, with the vegetables and chive and cook for about 1 minute more- stirring continuously

Finish with the rest of the peanuts, chilli and serve with lime
