There is always a part of the day when most people desire something sweet-bite; a mid-afternoon treat or after dinner dessert. Yes having alot of sugar isn’t good for you so I have been trying out a few sugar free recipes for a “now-and-again” treat.
I found a perfect one which uses almonds and 2 forms of coconut (oil and desiccated) and not much else. In addition there isnt much preparation (which is a nice bonus). The only downfall is it has to be kept in the fridge as it melts even at room temperature.
I had a little trouble deciding the name of this sweet. In the end i choose to call it “bark” as it isnt really the consistency of a crumbly fudge, but melts in your mouth like a piece of chocolate.
For variations try using tahini and crushed pistachios, instead of almond butter and desicated coconut, respectively.
160ml coconut oil, melted
120 g sugar free almond butter, melted
60g dessicated coconut
60ml rice malt syrup
Mix all the ingredients together in a bowl
Pour onto a greaseproof lined baking sheet (with sides)
Add to freezer for 20minutes or until set
Break up into pieces and enjoy or store in an airtight container in the fridge
