White chocolate and macadamia nut cookies

I might be across the pond from the UK, but I still try and keep up to date with the news back home. This week saw the return of the ever so success ‘Great British Bake Off’ with the theme of cookies and biscuits.

I haven’t been inspired to make the 3D show stopper creation of some of the bakers from the show. But simply just to bake a batch of one of my favourite cookie combinations (chocolate and nut).

Ingredients
225g butter
150g caster sugar
200g light brown sugar
2 tsp vanilla extract
2 eggs, beaten
390g flour
3/4 tsp salt
1 tsp baking powder
340g white chocolate chips
240g macadamia nuts, roughly chopped

Method

Preheat the oven to 170oC
Beat the butter and both sugars together until light and fluffy
Add the vanilla extract followed by the eggs gradually

Fold in the flour, salt and baking powder
Finally finish with the white chocolate and macadamia nuts

Shape into round balls on a lined baking sheet, then gently press down to form flat discs

Add to the preheated oven and bake for about 9-11 minutes
Once cooked leave to cool on a wire rack before munching
