I love recipes that look so innocent on the plate, but are packed full of flavour. Every mouthful has what people call a ‘taste explosion’ that isn’t expected.
I found this recipe from Ottolenghi’s cookbook which is a beautiful side salad which can be served with mostly anything that needs a bit of ‘greenery’. All the ingredients can be brought at the local supermarket, but what I did is use the herb garden- which is cheaper and also I can say that everything is home grown!
45ml olive oil
6 sage leaves
2tbsp lemon juice
Salt and pepper
Begin by making the dressing; heat the oil then add the sage leaves. Continue to heat until the sage become fragrant
Leave to cool then add the lemon juice, salt and pepper and set aside
Mix all the fresh herbs and salad leaves together and finely slice the mangetout
Carefully toast the flaked almonds- don’t burn them!
Mix in the sesame seed, pumpkin seed, chilli flakes and almonds. Then just before serving lightly coat the leaves with the dressing and dig in!
