Blackberry friands

With handfuls of fresh blackberries and few children under my feet begging for food 24/7 my afternoon was filled with a basic baking lesson. Choosing a basic, slightly healthy (but kid friendly ) recipe is hard to come by – but I love Nigel Slater’s blackberry friands recipe. So buttery and rich with the added difference of making a beurre nosiette to add a perfect finish.

Ingredients

180g butter
50g plain flour
180g icing sugar
100g ground almonds
1 tsp lemon zest
5 egg whites
60g blackberries, roughly chopped

Method

Preheat the oven to 200oC

Lightly butter 12 shallow bun tins

Melt the butter to create a beurre nosiette, then leave to cool

Mix the flour, sugar, almonds, lemon zest in a large bowl

Whisk the egg white to a stiff peak, the carefully fold into the dry ingredients along with the slightly cooled melted butter

Add the mix to cupcake cases and garnish with blackberries

Add to the oven for about 10-15 minutes. Once baked leave to cool in the tin before removing
