White chocolate and strawberry truffles

With a dinner party set for this week, I needed to have a go at making some more for after dessert treat. With it being summer and the abundance of strawberries in season I decided to make a white chocolate and strawberry truffle.

In case you didn’t know, the centre of any truffle is a ganache- a mix of chocolate, cream sugar and butter-which is then rolled in coco or melted chocolate (preferably tempered).

Ingredients

100g strawberries, pureed
140g white chocolate, melted
75ml whipping cream
150g white chocolate, tempered

Method

Add the strawberry puree and melted chocolate to a blender and blitz

Bring the cream to a boil, cool slightly and add to the blender. Mix to form an emulsion

Pour the ganache into a bowl and leave to set in the fridge over night to set

Take a teaspoon of set ganache and roll into a ball

Dip each ball into the tempered chocolate using a cocktail stick

Add to a wire rack which has a piece of greaseproof paper underneath to avoid it dripping onto the work surface

Leave to set…then enjoy!
